Mamm’s Potato Salad – Amish Recipe

Mamm’s Potato Salad
Ingredients:

  • 2 heaping quarts shoestring potatoes, cooked in jackets and peeled
  • 9 hard-boiled eggs, chopped
  • 1 1/2 cups celery, diced
  • 1 small onion, diced

Dressing Ingredients:

  • 2 tablespoons mustard
  • 1 tablespoon salt
  • 2 cups mayonnaise
  • 3 tablespoons vinegar
  • 1/3 cup milk
  • 1 1/3 cups sugar

Directions:

Put potatoes, eggs, celery, and onion in large bowl.

Mix dressing ingredients and pour over ingredients in bowl.

Toss gently to combine and refrigerate until ready to use.

Yield: 6-8 servings
