Free Recipe Friday – Whole Wheat Quick Buttermilk Bread

Georgia Varozza, author of The Homestyle Amish Kitchen Cookbook, promises this is one of the easiest recipes you’ll find anywhere in the universe…and one of the tastiest! This moist, dessert-type bread (along the lines of banana nut bread) is enjoyed best with butter and a good cup of coffee.

Whole Wheat Quick Buttermilk Bread

1 quart buttermilk
4 cups whole wheat flour
3 cups brown sugar
pinch of salt
1 tsp. baking soda

Mix together all ingredients and pour batter into 2 greased loaf pans. Bake at 350 degrees for 60-70 minutes.

Free Recipe Friday – Baked Chicken and Apples

Our April celebration of “Free Recipe Fridays” continues with another fantastic entry from The Homestyle Amish Kitchen Cookbook by Georgia Varozza. Popular Food Network star Rachael Ray’s magazine, Every Day with Rachael Ray, gave a shout-out last month to this particular recipe, telling readers to “serve this”! We couldn’t agree more.

Baked Chicken and Apples

1 whole chicken
2 apples, peeled, seeded, and quartered
1 onion, quartered
salt
pepper
1 tsp. parsley
1 tsp. sage
1 tsp. rosemary
1 tsp. thyme
½ tsp. oregano
2 cups hot water
cooked rice

Clean and place the chicken in a deep roaster or casserole dish. Fill the cavity with apples and onion. Sprinkle the salt and pepper and spices around and on top of the chicken. Pour 2 cups hot water into the roasting pan and loosely cover chicken with foil.

Bake at 350 degrees for approximately 1 ½ hours, or until a meat thermometer inserted into the thickest part of the thigh (but not touching the bone) reads 180 degrees.

The broth will be rich and have a greenish tint. If you think there isn’t enough broth for serving, you can add a little more boiling water or broth. To serve, slice the chicken and place on top of the cooked rice on individual plates with deep sides (to hold the broth). Place some of the onion and apple on the side and spoon broth over everything.

Free Recipe Friday – Crackletop Molasses Cookies

Hello, AmishReaders! We’re declaring April a month of “Free Recipe Fridays.” Every Friday this month we’ll post one of the delicious recipes found in The Homestyle Amish Kitchen Cookbook by Georgia Varozza. Enjoy!

Crackletop Molasses Cookies

4 cups flour
2 T. unsweetened baking cocoa powder
2 tsp. baking soda
1 ½ tsp. cinnamon
½ tsp. cloves
½ tsp. salt
¾ cup butter, softened
1 ¼ cups sugar, divided
1 cup molasses

Mix together the flour, cocoa, baking soda, cinnamon, cloves, and salt.

In a large bowl, beat together the butter and 1 cup sugar until fluffy. Beat in molasses. Gradually add flour mixture and beat just until mixed. Divide dough in half. Pat each half into a flattened 1-inch-thick round. Wrap in plastic wrap and chill at least 1 hour.

Heat oven to 375 degrees and lightly grease cookie sheets. Form tablespoonfuls of dough into 1-inch balls; roll in remaining ¼ cup sugar. Place one inch apart on prepared cookie sheets. Bake 10 minutes. Cool on cookie sheet for 1 minute before removing cookies to a rack to cool completely.

Join me in prayer for the PA family

I hope fans of Amish fiction will join me today in a prayer for the farm family in PA who lost 7 of their 8 children in a house fire. The family wasn’t Amish, but I believe they have Mennonite grandparents. Regardless of which Christian sect they belong to…losing seven children in this fashion is unspeakably horrific. May God be with the family today especially as they lay these seven children to rest.

MORE Potato Pancakes!

Wow, it sounds like I’m not the only one who loves potato pancakes. And since everyone has a different way of making them, here are two more potato pancake recipes from The Homestyle Amish Kitchen Cookbook. Enjoy!

Potato Pancakes I

4 large potatoes, peeled, enough to measure 3 cups of grated potato
&#188 cup onion, very finely chopped
2 eggs, slightly beaten
2 T. flour
&#190 tsp. salt
pepper to taste

Grate potatoes using a large-sized grater. Pat dry.

In a large bowl, combine grated potato, onion, eggs, flour, salt and pepper.

In a large, heavy skillet, slowly heat oil &#8539″ deep until very hot but not smoking. Drop potato mixture into hot oil in 2-tablespoon increments. With a spatula, flatten pancakes against bottom of skillet. Fry 2 to 3 minutes on each side. Drain well on paper towels.

Potato Pancakes II

3 medium cooked potatoes, grated
1 egg, beaten
1 tsp. salt

In a medium bowl, mix all ingredients together.

Who Loves Potato Pancakes?

I do! And, well, doesn’t everyone? When I think of “Amish food,” I think of potato pancakes first. So, here’s a recipe that makes use of leftover mashed potatoes. It’s a snap to make and smells heavenly as it cooks. Enjoy!

3 cups mashed potatoes
2 eggs, slightly beaten
&#188 cup flour
5 T. milk
Salt and pepper to taste

Mix together all ingredients and fry in a skillet well-greased with oil or a combination of oil and butter.
