Free Recipe – Amish Friendship Bread

Amish Friendship Bread

1 cup starter
2/3 cup oil
3 eggs, beaten
1/2 cup milk
1 tsp. vanilla extract
2 cups flour
1 cup sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1 large package vanilla instant pudding mix
nuts, optional
raisins, optional
dates, optional
cinnamon sugar

In a large nonmetallic bowl, mix together the starter, oil, eggs, milk, and vanilla extract.

In a separate bowl, mix together the flour, sugar, baking powder, baking soda, salt, cinnamon, and vanilla instant pudding mix. Stir into the starter mixture and mix well. At this point, you can add nuts, raisins, or dates- use about 1 cup total.

Grease 2 loaf pans and sprinkle the bottoms liberally with a cinnamon and sugar mixture. Pour the batter into the loaf pans and sprinkle the top of bread also with cinnamon sugar.

Bake at 350 for 50-60 minutes or until a toothpick comes out clean. Cool in loaf pans for 10 minutes before turning out onto a wire rack to cool completely.

Free Recipe Friday – Hot Chicken Salad

Hello, Amish Readers! Here is today’s selection from Georgia Varozza’s The Homestyle Amish Kitchen Cookbook.

Hot Chicken Salad

2 cups cooked chicken, diced
2 cups celery, chopped
2 T. onion, finely diced
1/2 cup almonds, slivered
1/2 cup mild Cheddar cheese, grated
1/2 tsp. salt
1 tsp. lemon juice
1 cup mayonnaise (or 1/2 cup each mayonnaise and sour cream)
1/2 tsp. prepared mustard
1 cup potato chips, coarsely crushed

Combine the chicken, celery, onion, almonds, cheese, and salt. In a separate bowl, mix together the lemon juice, mayonnaise, and mustard; pour over chicken mixture and toss gently. Put in a lightly buttered casserole dish, sprinkle with potato chips, and bake at 375 for 15-20 minutes.

Serve with French bread or crackers, or allow to cool slightly and spoon onto a bed of lettuce.

Free Recipe Friday – Easy Buttermilk Pancakes

Hello, Amish Readers! Here is today’s selection from Georgia Varozza’s The Homestyle Amish Kitchen Cookbook.

Easy Buttermilk Pancakes

2 cups flour
1 1/2 tsp. baking soda
1 tsp. salt
2 eggs, beaten
2 cups buttermilk
1/4 cup butter, melted

Thoroughly mix dry ingredients. Add remaining ingredients. Stir lightly to just moisten dry ingredients. Mixture will be thick and lumpy. Drop by tablespoons onto lightly greased griddle, spreading batter with spoon. Turn cakes as soon as browned on bottom. Cook until other side is browned.

Recipe – Cabbage Casserole with Hamburger

From The Homestyle Amish Kitchen Cookbook by Georgia Varozza.

Cabbage Casserole with Hamburger

2 heads cabbage, chopped
1 lb. hamburger
1/2 cup onion, chopped
1 pint sour cream
1 large can tomato juice (about 1 quart)
1 cup Cheddar cheese, shredded

Boil the cabbage and drain. Brown the hamburger and onion; drain.

In a large bowl, mix everything together, pour into a large baking dish, and bake at 400 for 45 minutes. (Check the casserole while baking and turn down the oven temperature if it looks as though your casserole is browning too quickly.)

Hello, Amish Readers! Here is today’s selection from Georgia Varozza’s The Homestyle Amish Kitchen Cookbook.

Zesty Oil and Vinegar Dressing

1/4 cup vinegar or lemon juice
3/4 cup oil
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. paprika
1/2 tsp. sugar
1/4 tsp. dry mustard
1 clove garlic, minced fine (optional)

Combine all ingredients and shake in a jar until well blended. Dressing will separate, but just shake it again when you use it.
