This is a very good recipe for preparing oven-fried chicken. I have been using a mild variation of the same, differing only a little in seasoning for many years. I wanted to mention that if you wish to use the recipe, then consider using it precisely that way. My issue is with the common confusion in substituting margarine in various forms for the butter given in the recipe. Using margarine contains a higher percentage of water, and in the case of the various "whipped" varieties, even air! Both the water, and especially the air, will dissipate quickly, and provide no fried effects at all.
